A hearty, crispy, and savory breakfast bowl finished with a bold peppery crunch. This dish combines seared steak and golden hashbrowns with sautéed spinach, eggs, and radish microgreens for balanced richness and freshness.
Directions
- 1Grate potatoes and squeeze out excess moisture using a clean towel. Season with salt and pepper.
- 2Heat oil or butter in a skillet over medium heat. Add potatoes, press into an even layer, and cook 5–7 minutes per side until golden and crispy. Set aside.
- 3Season steak with salt and pepper. Heat oil in a pan over high heat and sear 3–4 minutes per side. Add butter and baste. Rest for 5 minutes, then slice.
- 4In a small pan, heat olive oil over medium heat. Add garlic and cook briefly, then add spinach and a pinch of salt. Cook until just wilted (1–2 minutes). Set aside.
- 5Cook eggs to preference (fried, scrambled, or poached).
- 6Start with crispy hashbrowns, add sautéed spinach, then top with sliced steak and eggs.
- 7Add a generous handful of Triton radish microgreens on top. Finish with cracked black pepper and optional sauce.
- 8Top with Nutri Green microgreens of your choice!
