This dish pairs a perfectly seared steak—seasoned simply with salt, pepper, and herbs—with rich, creamy mashed potatoes loaded with sweet, roasted garlic. It’s a rustic yet refined combination that delivers comfort and indulgence in every bite. Directions
- 1Preheat oven to 400°F (200°C). Slice the top off a head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 30 minutes or until soft and golden. Let cool slightly and squeeze out the roasted cloves.
- 2Meanwhile, boil peeled and cubed potatoes in salted water until fork-tender, about 15–20 minutes. Drain, mash, and mix in butter, cream, salt, and the roasted garlic cloves until smooth and fluffy. Set aside, covered to keep warm.
- 3Pat steaks dry and season generously with salt and cracked pepper on both sides.
- 4Heat olive oil in a cast-iron skillet over high heat. Once hot, sear the steaks for 3–4 minutes per side for medium-rare, depending on thickness. In the last minute, add butter, smashed garlic cloves, and fresh herbs. Baste the steaks with the melted butter for extra flavour.
