This modern twist on classic pub food wraps juicy, smoky bratwurst in buttery puff pastry — golden and crisp on the outside, savory and succulent on the inside. Paired with a rich, pretzel-style beer-cheese sauce, it's the ultimate crowd-pleasing combo that hits all the right notes: sharp cheddar, hoppy beer, Dijon mustard, and creamy goodness.

Directions

  1. 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2Roll out puff pastry on a lightly floured surface. Cut into 6 equal rectangles.
  3. 3Wrap each bratwurst in a pastry rectangle, sealing the edges. Place seam-side down on baking sheet.
  4. 4Whisk egg and milk together for egg wash. Brush over each wrapped brat.
  5. 5Sprinkle tops with coarse salt or everything seasoning if desired.
  6. 6Bake for 20–25 minutes until puffed and golden.
  7. 7Make the Beer-Cheese Sauce - In a saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute to form a roux.
  8. 8Slowly whisk in beer, then milk or cream, stirring constantly until smooth.
  9. 9Add mustard, garlic powder, paprika, and a pinch of salt and pepper. Simmer until slightly thickened (3–4 minutes).
  10. 10Reduce heat to low and stir in shredded cheddar. Mix until melted and smooth. Adjust seasoning if needed.
