This modern twist on classic pub food wraps juicy, smoky bratwurst in buttery puff pastry — golden and crisp on the outside, savory and succulent on the inside. Paired with a rich, pretzel-style beer-cheese sauce, it's the ultimate crowd-pleasing combo that hits all the right notes: sharp cheddar, hoppy beer, Dijon mustard, and creamy goodness.
Directions
- 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2Roll out puff pastry on a lightly floured surface. Cut into 6 equal rectangles.
- 3Wrap each bratwurst in a pastry rectangle, sealing the edges. Place seam-side down on baking sheet.
- 4Whisk egg and milk together for egg wash. Brush over each wrapped brat.
- 5Sprinkle tops with coarse salt or everything seasoning if desired.
- 6Bake for 20–25 minutes until puffed and golden.
- 7Make the Beer-Cheese Sauce - In a saucepan over medium heat, melt butter. Whisk in flour and cook 1 minute to form a roux.
- 8Slowly whisk in beer, then milk or cream, stirring constantly until smooth.
- 9Add mustard, garlic powder, paprika, and a pinch of salt and pepper. Simmer until slightly thickened (3–4 minutes).
- 10Reduce heat to low and stir in shredded cheddar. Mix until melted and smooth. Adjust seasoning if needed.
- 11Serve.
