This luxurious dish showcases the beautifully marbled, deeply flavorful Prime Ribeye from Miller's Meats — expertly seared and basted for a perfect crust and juicy interior. It's paired with tender-crisp buttered asparagus, lightly seasoned to balance the richness of the steak. A spoonful of glossy, slow-reduced red wine demiglace ties everything together with bold, velvety depth — creating a simple yet sophisticated dish worthy of any celebration or special occasion.
Directions
- 1In a small saucepan, sauté shallots over medium heat until softened.
- 2Stir in tomato paste and cook for 1 minute.
- 3Add red wine and reduce by half.
- 4Add beef stock and a splash of balsamic vinegar.
- 5Simmer on low until thickened and glossy, 15–20 minutes.
- 6Strain and finish with 1 tsp cold butter before serving.
- 7Cook the Asparagus - Bring a pot of salted water to a boil. Blanch asparagus for 1–2 minutes, then immediately transfer to an ice bath (to preserve bright green color).
- 8In a skillet, melt butter over medium heat. Add asparagus, season with salt and pepper, and sauté for 1–2 minutes until just tender.
- 9Optional: Add a light squeeze of lemon or zest to brighten.
- 10Sear the Ribeye - Bring steaks to room temperature. Season generously with salt and pepper.
- 11Heat oil in a cast iron or heavy skillet over high heat until just smoking.
- 12Sear steaks 2–3 minutes per side until a deep crust forms.
- 13Reduce heat slightly, add butter, garlic, and rosemary/thyme. Baste with butter for another 1–2 minutes.
- 14Optional: Transfer to a 375°F (190°C) oven for 3–5 minutes if thicker, to reach desired doneness (130–135°F for medium-rare).
- 15Rest steaks 5 minutes before serving.
