These classic potato latkes are crispy on the outside, soft and tender on the inside, and packed with savory flavor. They're served with sour cream for a contrast of temperatures and textures.
Directions
- 1Prep the Potatoes: Grate potatoes and onion, then place in a clean towel and squeeze out as much liquid as possible.
- 2Make the Mixture: In a bowl, combine grated potato mixture with eggs, flour, salt, and pepper. Mix well.
- 3Heat the Oil: Heat a thin layer of oil in a skillet over medium-high heat.
- 4Form & Fry: Scoop small portions of the mixture into the pan, flattening slightly. Fry for 3–4 minutes per side until golden brown and crispy.
- 5Drain: Transfer to a paper towel-lined plate to remove excess oil.
- 6Serve: Serve hot with a dollop of sour cream and optional herbs or lemon. Top with microgreens.
