Directions
- 1Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 4–5 minutes per side, until golden brown and cooked through. Remove and set aside.
- 2In the same pan, lower the heat and add butter. Sauté garlic until fragrant, about 30 seconds. Stir in sun-dried tomatoes and cook for another minute.
- 3Pour in the chicken broth and cream, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then stir in parmesan and Italian seasoning. Let the sauce cook for 3–4 minutes until slightly thickened.
- 4Add baby spinach and stir until wilted. Return chicken to the skillet and spoon sauce over the top. Simmer gently for another 5 minutes to blend flavors and reheat chicken.
- 5Plate and garnish with Nutri Green microgreens and fresh basil or parsley. Serve with pasta, mashed potatoes, or crusty bread to soak up the sauce.
