This classic shakshuka is a bold, comforting dish of gently poached eggs nestled in a rich, spiced tomato and pepper sauce. Directions

  1. 1Sauté the Base: Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until soft (5–7 minutes). Stir in garlic.
  2. 2Add Spices: Add paprika, cumin, and chili flakes. Cook for 1 minute until fragrant.
  3. 3Simmer the Sauce: Pour in crushed tomatoes, season with salt and pepper, and simmer for 10–15 minutes until slightly thickened.
  4. 4Add the Eggs: Make small wells in the sauce and crack eggs into each. Cover and cook until whites are set but yolks remain soft.
  5. 5Finish & Serve: Remove from heat and top with a generous handful of cilantro microgreens. Serve immediately with warm bread.
