- 1Cook the Eggs: In a skillet over medium heat, melt butter. Whisk eggs with salt and pepper, then scramble until soft and just set. Remove from pan.
- 2Assemble the Quesadilla: Place one tortilla in a skillet over medium heat. Sprinkle half the cheese evenly, add scrambled eggs, then top with remaining cheese, any additives and the second tortilla.
- 3Cook Until Crispy: Cook for 3–4 minutes per side until golden brown and the cheese is fully melted.
- 4Add Microgreens & Serve: Remove from heat, carefully open or slice, and add a generous handful of cilantro microgreens inside or on top. Slice into wedges and serve immediately.
