They offer a lean and flavourful alternative to traditional beef patties, blending Australian ingredients with Southeast Asian flair for a burger experience unlike any other.

 

With a bold marinade and fresh, crunchy toppings, these gourmet-style burgers take lean kangaroo meat and infuse it with the vibrant flavours of Asian cuisine: soy sauce, ginger, garlic, and sesame oil. Each patty is topped with crunchy slaw and a drizzle of sriracha mayo, then perfectly grilled and served on toasted brioche buns with fresh herbs. The result is a burger that's tender, juicy, and completely unforgettable, delivering a unique twist on the classic BBQ favourite.

Directions

  1. 1In a bowl, mix ground kangaroo meat with garlic, ginger, soy sauce, sesame oil, chili flakes (if using), black pepper, and cornstarch. Combine well and form into 4 equal-sized patties.
  2. 2Preheat a grill or skillet to medium-high heat. Cook the patties for about 4–5 minutes per side, or until browned and cooked through. Kangaroo is very lean, so be careful not to overcook.
  3. 3While the burgers are grilling, toast the brioche buns until golden.
  4. 4To assemble, spread a spoonful of sriracha mayo on the bottom bun, place the kangaroo patty on top, then layer with crunchy Asian slaw, a few cilantro leaves, a generous sprinkle of Nutri Green microgreens, and ribbons of fresh cucumber.
  5. 5Top with the other half of the bun and serve with a lime wedge on the side for a zesty finish.
